Red and fiery hot! Madras Curry has a heavy use of chili powder and an earthy, fragrant and colourful blend of spices that often includes coriander, turmeric, cumin, fenugreek and chili. Madras curry powder is from Southern India. This blend contains a thickening agent, chickpea flour, to thicken finished dishes. Madras Curry Powder is traditionally used in chicken stew and is a wonderful fragrant addition to fish and shellfish curries. It is also superb for vegetable curries including cauliflower and eggplant.
